“Cool and refreshing”, the tradition of making Khao Chae in Thailand
has been passed from generation to generation. When the tropical weather
is at its hottest, this flavorful dish, not only helps you to brave the heat.
it also brings you your share of “good luck” !

The key to creating the dish is to soak the steamed rice in cool scented water that
has been perfumed with fresh tropical garden flowers. Six colourful and flavorful
side dishes are served with the scented rice, Khao Chae. They are:

 
 

1. Sweet chili-stuffed minced pork, steamed and wrapped in egg-net.
2. Shredded salted pork/beef, fried with palm sugar.
3. Sauteed sweet Chinese radishes, thinly sliced.
4. Deep-fried seasoned shrimp paste balls.
5. Shallots stuffed with fish and deep-fried.
6. Sweet shredded Yison fish.


All of these side dishes are accompanied with freshly carved vegetables.
